Florentine de Medici

Florentine de MediciSpinach happens to be one of my favorite veggies. Even when I was a kid spinach was the first thing I’d clean from my plate whenever my mom served it. Some thought I was a little weird… and that was probably true ;)

I still absolutely love spinach. It’s one of those beautiful, leafy green vegetables that tastes delicious cooked or served raw in a fresh salad. A bonus is that it’s extremely healthy.

This yummy side dish contains my favorite veggie paired with cheese, eggs and butter. It’s a fabulous, rich side you can serve with just about anything.

Florentine de Medici


2 – 10 ounce packages frozen spinach, thawed and well-drained, squeeze to remove water
6 tablespoons flour
4 extra large eggs, beaten
1 cup cream
1 cup cottage cheese
1/2 cup Parmesan Cheese, finely shredded

1-1/2 cups Monterey Jack Cheese, cubed
1/3 cup butter, cubed
1 cup chopped yellow onions
1-1/2 teaspoons sea salt
1/2 teaspoon fresh cracked black pepper
1 teaspoon ground nutmeg


In a large bowl, whisk flour and cream together. Add the remaining ingredients. Pour into a greased 3-quart dish and add topping.


3/4 cup fine bread crumbs
1/3 cup butter
1/2 cup Parmesan Cheese


Melt butter, add crumbs and cheese. Sprinkle over spinach and bake in a preheated 350 degree oven for 30 – 45 minutes or until bubbly and golden brown.

NOTE: For extra cheesy-ness, you can mix 1/2 cup shredded jack cheese with 1/2 cup Parmesan for the topping.
