Spinach happens to be one of my favorite veggies. Even when I was a kid spinach was the first thing I’d clean from my plate whenever my mom served it. Some thought I was a little weird… and that was probably true
I still absolutely love spinach. It’s one of those beautiful, leafy green vegetables that tastes delicious cooked or served raw in a fresh salad. A bonus is that it’s extremely healthy.
This yummy side dish contains my favorite veggie paired with cheese, eggs and butter. It’s a fabulous, rich side you can serve with just about anything.
I’ll bet your kids will love it… and so will you. Give it a try and then come back here to leave your comments. Enjoy!
